homemade vegan fudgsicles

summer is here! that means the weather is increasingly warmer and warmer and i am craving cold, yummy treats most of the time. i came across this recipe for healthy, vegan ice cream using only 3 ingredients and no added sugar one day, so i made it. it was delicious, and now i decided to make it again and pour it into popsicle molds to make fudgsicles! and now i am showing you how i did it!

if you love chocolate + peanut butter like i do, [let's admit it, it's the best combination ever] you will absolutely love this treat! these pops are so rich, creamy, and taste super indulgent without much guilt! let's get started...

what you'll need -- 
  • 2 large frozen bananas [must be frozen!]
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons peanut butter [or preffered nut-butter]
  • a splash or two of milk [i used almond milk]
  • blender or vitamix
  • popsicle molds
  • spoon or spatula

let your bananas thaw a bit before peeling, or even better, peel them before you stick them in the freezer for convenience! cut them up and toss in the blender.

dump in the peanut butter and cocoa, try to keep the peanut butter in the middle of the blender otherwise it will stick to the sides and not be fully incorporated!

blend on high until it becomes a smooth and creamy consistency. scrape down the sides if you need to. it will be very thick, and at this point your "ice cream" is made! eat it like this, or, this is when you will add a few splashes of milk to make it a bit thinner and more pourable. i added milk until the consistency was about that of cake batter. pour into your molds! add sticks, or in this case i used these cute umbrella molds with tight fitting lids. secure them and make sure they're sealed and place in the freezer for at least an hour or two, or until they are frozen solid.

time to eat! after they are frozen, take the mold out of the freezer and run the bottom under warm water to loosen the pops. remove and enjoy!

adjust this recipe to your liking! leave out the peanut butter, replace with another butter, or add raspberries, coconut, or anything else you like!
