YUM! // crockpot chicken noodle soup

okay, so i wish i documented this better but lets face it.. i wasn't sure how this would turn out. i shared this photo yesterday on my instagram and got some great feedback so i decided to cure your cravings with this recipe!

i dont know about you guys but when it comes to this time of year all i want to eat is soup. over the summer i invested in a crockpot from target. (the one i got was on sale for $30, a steal!) i literally want to make every meal in this thing. whoever invented it, i love you.

i found this recipe over on pintrest but i tweaked it a little. i like my soup to be hardy and full of veggies so i doubled the amount of vegetables in this recipe!

what you need:

  • 4 carrots, chopped

  • 4 stalks of celery, chopped

  • 1 medium onion, pealed & chopped

  • 3 chicken breasts

  • 6 cups of chicken broth

  • 2 cups of water

  • 1/2 teaspoon of salt

  • 1/2 teaspoon of pepper

  • 1/2 teaspoon of dried basil

  • 1/2 CUP of dried parsley lears

  • 1 bay leaf

  • 3 cups of egg noodles

directions

place chicken breasts in the crockpot, then pour in the chicken broth & cups of water. add in the rest of the ingredients EXCEPT the noodles.

cook on low for 8 hours. take the chicken out of the crockpot and with a fork shred the chicken apart. after you have shredded the chicken place back into the crockpot and add the noodles. cook for 45 on HIGH & enjoy!

* for those who like your chicken noodle soup on the peppery & salty side add to taste!
